Coffee Cupcake

Ingredients...

100g self raising flour
1/2 teaspoon baking powder
100g softened butter
115g caster sugar
2 eggs
5ml vanilla essence
5g instant coffee granules
30ml boiling water

Makes 12 cupcakes

Instructions...

- Preheat the oven to 180C/350F/gas 4. Line your muffin pan with paper cases.

- Sift the flour and baking powder together. In a seperate bowl beat the butter, then add the caster sugar and then beat again. Add the rest of the caster sugar and beat until light and fluffy.

- Add the eggs one at a time, beating well after each addition. Add the vanilla essence and combine.

- Add half the flour to the mixture and beat with a low speed electric whisk. Dissolve the coffer in the boiling water. Add the coffee and the remaining flour to the mixture and combine.

- Spoon the batter equally into the cupcake cases. Bake for 18 minutes or until a fork inserted into the center comes out cleans.

- Allow the cupcakes to cool before topping with icing.
